Pei Liu

Pei began her bartending career in 2015, blending her experiences of living and traveling in Australia with her background in chemical engineering to create a unique personal style and interpretation of cocktails.

Between 2017 and 2019, she challenged herself in various competitions, and from 2019 to 2022, she collaborated with different liquor brands as a consultant and international guest bartender, striving to develop a distinctive cultural path for Taiwanese bartenders.

In 2022, she founded the unDer lab bar brand, known for its unique cocktail tasting menu and immersive drinking experience.

T H E  C O N C E P T

unDer lab - a lab of drinking experiences

"unDer" combines the concept of an underground bar with a sense of secrecy through hidden passages. "Lab" represents our experimental style, incorporating scientific experiments to create unique flavours. 

The capital "D" emphasizes the shape of our bar seats, which allows for close interaction between the bartender and guests, emphasizing a strong sense of service. 

This is a distinctive feature of our establishment and is an essential aspect of our cocktail menu especially tasting menu. Once again, it highlights that this style of service is exclusive to "unDer." In summary, we aim to create the ambiance of a secret laboratory.

Integrating the refinement of classic mixology, we deconstruct and reconstruct elements such as local spirits, tea leaves, art, trends, and seasons. Our goal in this small laboratory is to continually create WOW MOMENTS and explore the unforgettable "Taiwanese Cocktail Style."
