The inaugural title of 'The Bar World of Tomorrow' goes to 'Shinjuku Whisky Salon.
ORIGINAL Inc., the operator of Time Out Tokyo (Headquarters: Shibuya-ku, Tokyo; CEO: Hiroyuki Fushitani), has nominated four pioneering bars in Tokyo for the 'The Bar World of Tomorrow Award,' organized in partnership with Pernod Ricard Group by Time Out Global in eleven cities worldwide. The first-ever winner of 'The Bar World of Tomorrow' in Tokyo was announced on September 1, 2023, and 'Shinjuku Whisky Salon' was awarded the title.
The winners were determined through an assessment and investigation of each bar's practices in waste management, sourcing of materials, employee welfare, fair wages, and other sustainability initiatives, in collaboration with Pernod Ricard and Trash Collective, proposed by the 'Sustainable Restaurant Association (The SRA).'
'Shinjuku Whisky Salon' was recognized for various initiatives contributing to the preservation and development of sustainable natural environments and traditional cultures, such as responsible sourcing of ingredients with consideration for corporate social responsibility, the use of environmentally friendly masu cups, bamboo tubes, and domestically crafted Japanese glassware.

Furthermore, they position themselves as a bridge between producers and consumers, regularly visiting suppliers to learn about their businesses, and fostering an ideal relationship between producers and consumers by sharing their stories through social media and events.
In their efforts to reduce waste, they use dried egg whites instead of fresh eggs to minimize egg yolk waste. They also pre-make cocktails and chill them to reduce the amount of ice used in cocktails, as well as chilling glasses for the same reason. They have not only reduced food waste but have also eliminated disposable plastics (and the associated waste). Additionally, they have achieved a paperless operation by digitizing all their processes.
In terms of employee welfare, they ensure that employees can take paid leave regularly and have set up flexible rotations and maximum working hours. Moreover, they consider staff needs by accommodating "menstrual leave."
