"Chocolatier Paledor" is a Japanese chocolatier (chocolate specialty shop) founded in 2004 by Chef Shunsuke Mitsueda.

In the pursuit of the taste and lingering notes of chocolate, we arrived at the creation of our own homemade chocolate.

The brand's greatest strength lies in the unparalleled, original flavors crafted from cocoa beans.

Handling every step from the selection of cocoa beans to roasting, we produce not only homemade bitter and milk chocolate but also white chocolate. Based on these, we explore all possibilities that cocoa and chocolate can express, including chocolate bars, bonbons, cakes, drinks, and more. We strive to discover unique flavors that cannot be experienced elsewhere.

In the realm of whiskey, just as various types of base spirits are blended to achieve a desired profile, we, too, blend from our brand's unique "Chocolate Library" to create our distinct and unparalleled flavor.

Particularly, unlike mass-produced pre-blended chocolates available in the market, the aroma and taste of homemade chocolate have the power of enhancing the compatibility and pairing with other ingredients with higher precision. It serves as a pure "cocoa material" that elevates the overall experience.

"About the Stores"

Currently, Chocolatier Paledor operates three stores in Tokyo, one in Osaka, and one in Yamanashi, totaling five physical locations in addition to its online shop.

In the boutiques in Tokyo, Osaka, and Ginza, a variety of bonbons, Gâteau (cakes) using chocolate, and more are available, with dozens of options. The Marunouchi store in Tokyo and the Osaka store have salons attached, offering original drinks and parfaits using cocoa, as well as a café with specially blended beverages to complement chocolate. They also provide Bean to Cocoa (cocoa drink made in-house from cocoa beans) using homemade cocoa powder. Chocolatier Paledor offers various pleasures and products unique to them, including chocolate and champagne or whiskey pairings, reflecting their involvement in every step from cocoa to chocolate.

The Tokyo Aoyama store, "Chocolatier Paledor Blanc," uniquely squeezes cocoa butter from cocoa beans within the workshop, creating white chocolate using cocoa beans from different origins. Among the many Bean to Bar establishments worldwide, very few consistently manufacture chocolate from cocoa beans. This specialty store is a pioneering attempt, producing a wide range of products, including baked goods, drinks, and soft-serve ice cream, using homemade cocoa butter-based white chocolate and cocoa powder made on-site. Customers can enjoy products not available elsewhere.

At the Yamanashi Kiyosato store, "Artisan Paledor," carefully selected cocoa beans from around the world are roasted to perfection, taking into account the optimal conditions for each bean, and crafted into chocolate. This Bean to Bar workshop, where a chocolatier personally engages in the production of chocolate from cocoa beans on a scale of 10 tons per year, is rare globally and stands as a pioneer of Bean to Bar in Japan. Surrounded by the beautiful nature overlooking the Yatsugatake Mountains, the cool environment resembles a European mountain resort, proving ideal for storing cocoa and aging chocolate. With over 40 years of experience and expertise, Chef Mitsueda, who has handled numerous chocolates, runs this unique chocolate workshop. The tablets produced in this workshop have received numerous awards at international chocolate competitions such as the International Chocolate Awards Asia and World competitions, as well as the Academy of Chocolate in the United Kingdom.

【Chef Shunsuke Mitsueda Profile】 Owner Chef/Chocolatier

Representative Director: Shunsuke SAEGUSA

Born in 1956 in Osaka, Japan. Trained under the renowned confectioner, the late Juiichi Yasui, at the prestigious Hotel Plaza in Osaka.

In 1996, he encountered the master chocolatier, the late Maurice Bernachon, in Lyon, France, and received guidance as a chocolatier. Subsequently, he opened the authentic chocolate specialty shop "Chocolatier Paledor" in Osaka in 2004 and in Tokyo in 2007.

In 2014, he initiated the Bean to Bar workshop "Artisan Paledor Kiyosato," where the entire process from cocoa beans to chocolate is handled in-house.

In his pursuit of mastering chocolate, he closed all other confectionery brands, focusing solely on chocolate.

In 2019, he opened the White Chocolate Bean to Bar brand "Chocolatier Paledor Blanc" in Aoyama.

In April 2021, "Chocolatier Paledor GINZA" was opened in Ginza 5-chome.
