From the chocolate specialist brand 'Chocolatier Paled'Or,' led by chocolatier Shunsuke Mitsueda, who engages in authentic chocolate making from cocoa beans, we present chocolates crafted with 'Dassai Shochu' made from sake kasu (sake lees) of the renowned 'Dassai' sake from Yamaguchi Prefecture. Additionally, we showcase truffles made with 'Dassai Junmai Daiginjo Polished to 23%' used in the preparation of 'Dassai Authentic Plum Wine Polished to 23%.'
Raw Chocolate with Dassai Shochu
Dassai Shochu is crafted by distilling the lees peeled on the same day from 'Dassai' sake. Retaining the fragrance of Dassai, it is characterized by its impactful and robust flavor with an alcohol content of 39 degrees.
Inspired by the fusion of Dassai Shochu and cocoa, we used homemade chocolates from Madagascar and Belize cocoa to create a smooth-textured 'Raw Chocolate.' As it melts in your mouth, savor the lingering aroma of Dassai Shochu that gradually transforms from a fruity fragrance, offering a delightful aftertaste.

"Chocolatier Paled'Or" is a Japanese chocolatier (specialized chocolate shop) founded by Chef Shunsuke Mitsueda in 2004.

In the pursuit of the taste and lingering notes of chocolate, the unique approach taken was the creation of homemade chocolate.
The brand's greatest strength lies in the unparalleled and original flavors derived from working with cocoa beans.
Handling every step from cocoa bean selection to roasting, the brand produces not only homemade dark and milk chocolate but also white chocolate. Based on these, they explore all possibilities of expression using cocoa and chocolate, including chocolate bars, bonbons, cakes, drinks, and more, seeking unique flavors that cannot be experienced elsewhere.
Analogous to blending various types of base spirits in whiskey-making to achieve the desired flavor, the brand creates its distinctive taste by selecting from its exclusive "Chocolate Library." This process, akin to a whiskey distillery, results in a one-of-a-kind flavor that sets the brand apart.
Particularly noteworthy is the fact that, unlike mass-produced, pre-blended chocolates commonly found in the market, the aromatic and flavorful qualities of homemade chocolate, as a pure "cocoa material," enhance the compatibility and pairing precision with other ingredients.

Currently, we operate three stores in Tokyo, one in Osaka, and one in Yamanashi, totaling five physical locations. Additionally, we have an online shop.
Tokyo Store / Osaka Store / Ginza Store
In the Tokyo, Osaka, and Ginza boutiques, we offer a diverse range of over dozens of bonbons and Gâteau (cakes) made with chocolate. The Marunouchi store in Tokyo and the Osaka store have salons where you can enjoy original drinks and parfaits made with cocoa, as well as a specially blended café that complements our chocolates. We also provide a unique Bean to Cocoa (cocoa drink made in-house from cocoa beans) using homemade cocoa powder. Additionally, we propose various pleasures and products unique to "Chocolatier Paled'Or," such as chocolate paired with champagne or whiskey, handling all processes from cocoa to chocolate.
At the Tokyo Aoyama store, "Chocolatier Paled'Or Blanc," we press cocoa butter from cocoa beans in our workshop and create white chocolate using cocoa beans from different origins. Among the numerous Bean to Bar shops worldwide, very few undertake the entire process from cocoa beans to chocolate. We are pioneers in producing a wide range of products, including baked goods, drinks, and soft-serve ice cream, using our homemade white chocolate with cocoa butter and cocoa powder. This specialty store's approach, involving products born from homemade cocoa butter and cocoa powder, is a groundbreaking endeavor and offers a unique experience not found elsewhere.
At the Yamanashi Kiyosato store, "Artisan Paled'Or," we meticulously roast carefully selected cocoa beans from around the world in the optimal conditions tailored to each bean, bringing them to the final chocolate stage. The Bean to Bar workshop, where chocolatiers personally undertake chocolate making from cocoa beans on a scale of 10 tons per year, is globally rare and a pioneer in Bean to Bar in Japan. Surrounded by the beautiful nature overlooking the Yatsugatake mountains, the cool environment is reminiscent of European mountain resorts, providing ideal conditions for cocoa storage and chocolate aging. With a career spanning over 40 years and a chef who has continuously worked with various chocolates, the workshop is a unique creation by Chef Mitsueda. The tablets produced in this workshop have received numerous awards at events such as the International Chocolate Awards Asia and World competitions, as well as the Academy of Chocolate in the United Kingdom.

Representative Director Shunsuke Saegusa
Born in 1956 in Osaka, Japan. Started his career in the world of Western confectionery under the mentorship of the late Juiichi Yasui, a prominent figure in the confectionery industry, at the prestigious Hotel Plaza in Osaka.
In 1996, he encountered the master chocolatier, the late Maurice Bernachon, in Lyon, France, and received training as a chocolatier. Following this inspiration, he opened the authentic chocolate specialty store "Chocolatier Paled'Or" in Osaka in 2004 and in Tokyo in 2007.
In 2014, he initiated the Bean to Bar workshop "Artisan Paled'Or Kiyosato," where the entire process from cocoa beans to chocolate is undertaken in-house to achieve the highest quality.
In his pursuit of mastering chocolate, he closed all other confectionery brands, focusing solely on elevating the art of chocolate.
In 2019, he opened the Bean to Bar brand specializing in white chocolate, "Chocolatier Paled'Or Blanc," in Aoyama.
In April 2021, "Chocolatier Paled'Or GINZA" was opened in Ginza 5-chome.
