For its raw material, it uses carefully cultivated edible rice from Kagoshima Prefecture, rich in umami. Employing the method of "vacuum distillation," which steams the ingredients slowly at low temperatures, results in a shochu with minimal impurities and a refreshing, light taste. Following distillation, the shochu is stored in highly sealed tanks, preserving the essence and aroma of the rice itself. After maturing for 30 years, the shochu allows the flavor of the rice to develop fully and meticulously.
