To the new path of peat:

In an industry that values tradition, surprisingly, even the oldest style of whisky, single malt, lacks formal processes. Even the process of peating, which involves drying malt using peat smoke, is still largely shrouded in questions rather than answers.

Without the guidance of history, we had to forge our own path through peating. To create something labeled as "peated whisky" in this new world, we had to chart a course by groping in the dark, starting from where we stand now. Here in America, we are not trying to recreate the romanticized peating of the old world. Instead, we are looking forward to the future. We chose a modern, science-based approach that maximizes today's technology, rather than relying on the antiquated methods of the past.

In this region of the Pacific Northwest, there are those who view the wall before us in the face of new territory as a door to opportunity.

With courage, they step into the unknown and express the essence of the land through peat, seeking the opportunity to bring out the unique essence of the diverse vegetation. The first step in unlocking the secrets of the land beneath our feet is Solum.

About Garryana:
Garryana, or Quercus Garryana, is a species of White Oak native to the Pacific Northwest, mainly originating from southern British Columbia to the western regions of Washington State and the Willamette Valley of Oregon. Among White Oaks, Garry Oak is extremely rare. It takes a long time to grow, and due to its high tannin and phenolic content, it takes several years of air-drying after being used for barrels to mellow its components. Harvesting is prohibited due to its rarity, and only fallen trees can be used. Because of its overpowering character, Garry Oak has not been used for barrel-making in the local wine industry as it would overshadow the delicate flavors of the wine, leading to these trees being left unused in lumber mills for a long time.
About Westland Outpost Range:
However, Matt Hofmann and his team saw the potential of Garry Oak, believing that "there is no oak that can express our terroir as much as this
"Westland Outpost Range" is a new series from Westland Distillery, rooted in the frontier spirit of its hometown Seattle, aiming to explore the untapped potential of single malt whisky. This series includes eagerly anticipated releases such as "Garryana," which utilizes rare local oak, "Colere," made with 100% local barley, and "Solum," crafted with local peat. While the world of whisky has already been extensively explored, this series takes on the role of an "outpost" pioneering into uncharted territories, leading the way for new horizons in the realm of whisky.
WESTLAND DISTILLERY
